recipe: Simple Tomato Soup
One of my favorite Comfort Foods is tomato soup and grilled cheese. Yet, since Matt's heart surgery in December '07, needless to say we haven't had it too often. Of course, the key problem was finding a Tomato soup that had less than 600 mg of sodium per serving, which ruled out most prepackaged soups. I have found numerous recipes which sound delicious, yet require a lot of time and ingredients for a meal that I usually don't plan that far ahead for until I stumbled across this site in my web meanderings. This is the original recipe and what follows is my variation of it. Very Simple and Super Yummy!
Tomato Soup with Balsamic Vinegar
3 cups Water
1 - 6 oz can No-Sodium Added Tomato Paste
1/4 tsp Onion Powder
1/4 tsp Garlic Powder
1/8 tsp Black Pepper
1 Tbsp Balsamic Vinegar
Directions
In a medium sauce pan bring water to a boil. Add tomato paste and whisk until smooth. Reduce heat to medium-low. Add onion powder, garlic powder, black pepper and balsamic vinegar. Adjust Seasonings to Taste. Serves 4.
Nutritional Analysis
Per Serving: 44 Calories; 0 g Fat; 0 mg Cholesterol; 32 mg Sodium; 9 g Total Carbohydrate; 1 g Dietary Fiber; 4 g Sugar; 3 g Protein
